Ingredients

  • 150 g butter
  • 1 lime (s)
  • 250 g flour
  • 2 teaspoons baking soda
  • 350 grams sugar
  • 100 g desiccated coconut
  • 3 egg (s)
  • 150 ml coconut milk, (can)
  • 100 ml lime juice

  • Cocktail fruits (cherries)
  • Coconut chips
  • Desiccated coconut
  • Lime (s) - slices

Instructions

  1. Melt the butter.
  2. Finely grate the peel of the lime. Mix the flour, baking powder, 175 g sugar, lime zest and desiccated coconut. Mix eggs, butter and coconut milk together. Gradually stir in the flour mixture. Pour the dough into a greased wreath form (ø 26 cm) dusted with flour. Bake in a preheated oven at 175 ° C for approx. 45 minutes.
  3. Let the lime juice, 175 g sugar and 5 tablespoon water boil down for about 5 minutes.
  4. Turn the cake over and prick it several times with a wooden skewer. Soak the cake with the syrup and let it cool down. Garnish with cherries, coconut chips, grated and lime slices.
