Liver Tubules with Eggs and Carrots

Liver pancakes with eggs and carrots are a very simple, inexpensive, but at the same time very bright, tasty and juicy cold appetizer for a large company.

Ingredients

  • Chicken liver – 500 g
  • Beef liver – 400 g
  • Eggs – 4 pcs.
  • Boiled eggs – 10 pcs.
  • Milk – 0.5 l
  • Flour – 6 tbsp
  • Carrots – 10 pcs.
  • Bulb onions – 4 pcs.
  • Sour cream – 3-4 tbsp
  • Mayonnaise – 6 tbsp
  • Garlic to taste
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. We immediately send the chicken liver to a blender, and first cut the beef into small pieces. We interrupt with a blender and send to a container where we will knead the dough. Salt and pepper.
  2. Beat 4 large (or 5 small) eggs with a whisk. We send to the liver. Pour in some of the milk. If desired, add more salt, because this liver dough “loves” salt.
  3. Add flour and mix.
  4. Beat everything with an immersion blender to remove lumps.
  5. Add the remaining milk. The dough is ready, it should be liquid.
  6. Lubricate the pan with vegetable oil. Pour in a portion of the dough and distribute over the pan.
  7. Fry pancakes on both sides. (Be sure to try the first pancake to see if there is enough salt and pepper in the dough. Add them to the total mass if necessary.)
  8. The pancakes will be ready in just 20 minutes. I got 30 pieces.
  9. The pancakes are very thin and elastic.
  10. Cut the onion into thin quarter rings.
  11. Pour vegetable oil into a frying pan and send onions there.
  12. Passing. When the onion is soft and transparent, season with salt and pepper.
  13. Grate the carrots on a coarse grater and add to the onion. Simmer the carrots until tender.
  14. Rub boiled eggs on a fine grater, alternating with garlic cloves. Add mayonnaise and 1 tablespoon. a spoonful of sour cream.
  15. Stir and salt.
  16. Add a few tablespoons of sour cream to sautéed vegetables (2-3 tablespoons).
  17. We put the pancake on the board with the dark side down and the tight edge towards us. Spread the egg mass over the surface with a thin layer.
  18. At the edge we spread 1 tablespoon. a spoonful of filling
  19. We wrap the filling in a pancake.
  20. Cut in half.
  21. The liver tubes with eggs and carrots are ready. Store in the refrigerator.
