Ingredients

  • 500 ml soy drink, (soy rice drink)
  • 125 ml oil
  • 200 g cane suar
  • 2 teaspoons vanilla sugar
  • 0.5 teaspoon ½ salt
  • 1 bar chocolate, dark or semi-dark chocolate
  • 250 g spelled flour
  • 75 g cocoa powder, slihtly de-oiled
  • 2 teaspoons baking soda
  • 2 teaspoons apple cider vinegar

Instructions

  1. First put the soy rice drink together with the oil, sugar and vanilla sugar in a large saucepan and bring to the boil, stirring occasionally, then reduce the heat and simmer for 5-10 minutes until the liquid is clear and a little viscous. Add salt and apple cider vinegar and set aside.
  2. Now the oven can be preheated to approx. 180 ° and the baking sheet can be prepared. Break the chocolate into pieces and add to the still warm liquid. After a few minutes, stir with a whisk so that the melted chocolate mixes with the liquid. Sieve the remaining ingredients, flour, cocoa powder and baking soda together in a mixing bowl. As soon as the oven has preheated, pour the entire contents of the saucepan onto the dry ingredients and mix briefly but thoroughly. It is normal for the dough to start to rise a little by now, as apple cider vinegar and baking soda react with each other. Therefore, the dough must now be quickly distributed on the tray and off to the oven! Bake for only 12-20 minutes (depending on the oven) and take out of the oven as soon as a wooden stick can be pulled cleanly out of the cake.
