Ingredients

  • 100 g almond flour, partially de-oiled
  • 100 g flaxseed
  • 3 tablespoon soy flour
  • 2 tablespoon sesame seeds
  • 6 tablespoon wheat bran or oat bran
  • 1 packet baking powder
  • 1 teaspoon salt
  • 4 g bread spice mixture, only as needed
  • 250 g low-fat quark
  • 5 egg (s)

Instructions

  1. Mix the almond flour, flax seeds, sesame seeds, soy flour, wheat bran and baking powder together in a bowl.
  2. In another bowl, stir the eggs and quark with a hand mixer until smooth, add the salt.
  3. While stirring with a hand mixer, gradually mix the grain mixture with the quark-egg-salt mixture. If desired, add the bread spice. If you are not a real fan of caraway, anise, fennel or coriander, you should leave it out, otherwise it will taste too powerful.
  4. Now put the well-mixed mass into a greased loaf pan or lined with baking paper and bake at 180 ° C for about 60 minutes on top / bottom heat.

  6. You can usually only get expensive almond flour in well-stocked organic shops or health food stores. Ground almonds from the supermarket also work for the production of this bread. However, these are usually not partially oiled and thus affect the consistency of the bread.
  7. The bread has a slightly nutty taste and goes well with almost any topping.
