Instructions

  1. Remove all stems and leaves from the cauliflower and cut the cabbage into small pieces. Chop in the food processor until it looks like semolina. If you don`t have a food processor, you can also try it with a cheese grater, a sharp knife (shave off the whole head) or with a magic wand (but not too thick, it shouldn`t be puree)
  2. Place the chopped cauliflower in a microwave-safe bowl and cook for about 8 minutes. There is no need to add water, as the natural moisture is sufficient. How to do that when you don`t have a microwave I don`t know. I suspect it can also work with thawed frozen cabbage or with cabbage that has been cooked beforehand. I didn`t have enough testing options then.
  3. A large cauliflower produces 3 - 4 cups (approx. 250 ml per cup). One mug is required per pizza for 2 - 3 people. The remaining cabbage crumb dough can be stored in the refrigerator for up to 1 week.
  4. Preheat the oven to approx. 230 ° C. Line a tray with baking paper or baking foil. In a bowl, mix 1 cup (approx. 200 g) cauliflower, an egg and approx. 200 g grated cheese to a pulp. Then there are the herbs, garlic and salt.
  5. Mix everything together vigorously. This is simply supposed to be a pulp. At the beginning I thought that it could never turn out after all, it has a completely different consistency than yeast dough, but because of these doubts you just have to go on.
  6. Spread the dough on the baking sheet and spread it out with your hands in the shape and thickness you want. If you like, you can brush the surface with olive oil to aid the browning. Bake at 230 ° C for about 15 minutes (until it looks deliciously browned).
  7. Take out of the oven and spread with pizza sauce. Then top it as desired (however, do not use raw minced meat, as the pizza is now only baked). Put the whole thing in the oven again for about 10 minutes, until the cheese has melted or browned.
