Ingredients

  • 20 g wheat flour
  • 60 g protein powder (whey), vanilla
  • 4 egg whites
  • 20 ml long-life milk, 0.3% fat or soy milk, almond milk, etc.
  • 0.5 ½ apple, peeled
  • 50 g blueberries, frozen or fresh
  • 20 g quark
  • 5 g cinnamon

Instructions

  1. Put the flour and the whey protein powder in a bowl and go through with a fork until everything is well combined. Then add the six tablespoons of milk and mix everything.
  2. Next, separate the eggs and beat the egg whites until it becomes a solid mass.
  3. Now mix the flour-protein-milk mixture with the egg white. This takes around two to three minutes. Carefully fold in everything. Cut the apple into small pieces and add to the somewhat fluffy mass.
  4. Now heat some oil in the pan and add one to three tablespoons of batter. Depending on how big you want the pancakes to be, the batter is enough for up to eight large pancakes. Bake them until golden brown on both sides.
  5. Stack the pancakes and cover them with a quark cover, garnish with the blueberries and sprinkle with some cinnamon.
  6. Notes: The pancakes are not only low-carb, they also really fill you up. Plus, the ingredients add up to just 532 calories.
  7. The difficulty with low-carb pancakes is to make a batter that won`t disintegrate when frying in the pan. And of course the mini pancakes should still taste good and be nice and fluffy even if they don`t use sugar and 80% flour. Protein powder is mostly used for low-carb pancakes.
