Instructions

  1. Finely dice the tomato, egg, onion and half a clove of garlic. Mix with vinegar, oil and mustard until the egg yolk has dissolved and season with salt and pepper. The vinaigrette should taste very strong, as it is softened by the mild asparagus.
  2. Drizzle the vinaigrette over the asparagus stalks that are still warm and cooked in salted water and enjoy.
