Ingredients

  • 1 cup rice
  • 150 g chicken breast
  • 0.5 ½ bell pepper (s), red
  • 0.5 ½ bell pepper (s), green
  • 2 medium onion (s)
  • 1 tablespoon raisins
  • 2 tablespoon cashew nuts
  • 1 teaspoon curry
  • 1 pinch (s) cinnamon
  • salt and pepper
  • sugar
  • some oil
  • possibly chilli or sambal oelek

Instructions

  1. First cook the rice in salted water.
  2. Peel and chop the onions. Finely dice the peppers and halve the cashew nuts. Cut the chicken breast into small pieces.
  3. Then sear the chicken breast with salt and pepper in a pan of at least 28 mm. Remove the meat from the pan and set aside.
  4. Roast the onions, peppers and finally the raisins and cashew nuts one after the other. Attention! The cashew nuts burn very quickly.
  5. Now it depends. First fry the pre-cooked rice well and then gradually add all the ingredients as listed and fry well.
  6. Finally, I have to say that it also goes well with grilled chicken and braised chicken from the oven if the meat is left out.
  7. I`ve always had great success with it when I visited and always had too little of it. By the way, the recipe actually comes from locals from the rainforest of Malaysia. However, that was hot as hell. If you like, you can add chili or sambal oelek.
