Ingredients

  • 1 large onion (s)
  • 100 g bacon, diced
  • 500 g potato (s), cooked
  • 300 g sausae, city sausae (1/2 rin), Franconian sausae, alternatively meat sausae
  • 3 egg (s)
  • 300 g thick milk or more, amount as desired
  • 1 tablespoon clarified butter, for frying
  • 2 tablespoon parsley, chopped
  • salt and pepper

Instructions

  1. Dice the onion, cut the potatoes into slices, peel the city sausage, cut in half lengthways and cut into slices. Beat eggs.
  2. Leave the bacon cubes in the clarified butter in a pan, add the onions and fry. Then add the potatoes and fry them too. Potatoes and diced onions can take on a little color.
  3. Add the city sausage, mix everything well and pour the beaten eggs over it. Stir until the eggs are set.
  4. Season with salt and pepper and sprinkle with the chopped parsley.
  5. We always ate sour milk with it.
  6. I know this isn`t the big kitchen, but I loved this recipe as a kid and still appreciate it today. I especially like the unusual combination with the sour milk. True to the motto: simple but incredibly delicious!
