Ingredients

  • 300 g mixed rains (spelled semolina, reen spelled meal, oat flakes)
  • 5 tablespoon soy flour
  • 500 ml vegetable stock
  • 100 g amaranth
  • 100 g quinoa
  • 350 g chickpeas, corn, peas (cooked)
  • 50 g sunflower seeds
  • 50 g soy flakes
  • 1 onion (s), (steamed)
  • salt and pepper
  • 75 g cheese, rated
  • 50 ml cream

Instructions

  1. Cook the amaranth and quinoa in 200 ml vegetable stock. Mix the rest of the grain with the soy flour. Pour 300 ml of boiling vegetable stock over it, mix well and leave to soak for 30 minutes. Then mix everything together well.
  2. Add vegetables, steamed onions, soy flakes and sunflower seeds, mix everything well again and season with salt and pepper to taste.
  3. Then spread the mixture in a greased baking dish and press it down.
  4. Bake at 200 degrees for 20 to 30 minutes.
  5. Mix the cheese and cream, spread the mixture on top and bake for another 10 minutes until it is light brown.
  6. If you want it vegan, you can also top it with yeast melt. That’s delicious too!
