Ingredients

  • 750 g mushrooms
  • 8 tablespoon olive oil
  • 6 tablespoon sherry vinegar
  • 2 cloves garlic, sliced
  • 1 sprig rosemary
  • 1 sprig sage
  • 1 pinch (s) salt
  • 1 pinch (s) sugar
  • 1 pinch (s) pepper, freshly ground
  • 0.5 ½ bunch parsley, smooth

Instructions

  1. Clean the mushrooms and cut into thick slices.
  2. Heat the olive oil in the pan and fry the garlic slices and mushrooms until the resulting liquid has evaporated completely. Add the sherry vinegar. Add the plucked herbs and bring to the boil. Season to taste with salt, pepper and sugar. Let it cool down and let it steep for at least 2 hours.
  3. Sprinkle with chopped parsley before serving.
