Ingredients

  • 500 g pork loin (s)
  • 5 tablespoon mango chutney
  • 5 tablespoon soy sauce, dark
  • 2 teaspoons oil
  • 1 lime (s)
  • 1 teaspoon coriander
  • 3 peach (s), ripe, firm
  • 1 teaspoon cane sugar

Instructions

  1. Cut the loin into 2 cm thick slices, flatten them a little and place in a bowl.
  2. Rub the peel of the lime, squeeze out the juice. Lightly mash the coriander seeds in a mortar.
  3. Mix the chutney, soy sauce, 1 teaspoon oil, coriander seeds, lime zest and juice and pour over the meat. Marinate in the refrigerator for at least 2 hours, turning occasionally.
  4. Wash, dry, core and cut the peaches into wedges. Heat 1 teaspoon of oil in a pan. Put the peaches in the pan and sprinkle with sugar. Turn after 1 minute, fry again for 1 minute - no longer! Take out of the pan.
  5. Remove the meat from the marinade and fry in the pan for 8-10 minutes. Reduce the heat, pour the marinade over the meat, fry for another 2 minutes. Add the peaches, season with soy sauce and serve immediately.
  6. Rice tastes good with it.
