Ingredients

  • 1 kg pumpkin (se), e.g. Hokkaido, butternut or similar
  • 300 ml olive oil
  • 1 teaspoon chilli flakes
  • 3 teaspoons curry powder
  • 2 teaspoons oregano, grated
  • 2 teaspoons thyme, rubbed
  • 1 teaspoon salt
  • 3 teaspoons lime juice or lemon juice
  • Garlic, finely diced
  • pepper

Instructions

  1. Wash the pumpkin, cut into 0.5 cm thick slices or wedges, remove the seeds and, depending on the variety, peel beforehand if necessary.
  2. For the marinade, mix the oil with all the herbs, spices and salt in a bowl and season with lime juice.
  3. Lay the pumpkin flat on 1-2 baking sheets lined with baking paper and drizzle with the marinade.
  4. You can also mix the marinade and the pumpkin in a bowl and keep it cool until baking, if you want / have to prepare it early. Then distribute on baking sheets for baking.
  5. Bake for 20 minutes at 180 ° C, then the pumpkin is still slightly firm to the bite.
