Ingredients

For the burger buns:

  • 175 g wheat flour
  • 10 g yeast
  • 40 ml milk
  • 1 teaspoon honey
  • 20 g butter
  • 1 egg (s)

Also:

  • 1 egg white for brushing
  • 1 tablespoon sesame seeds for sprinkling

For the patties:

  • 400 g round beef
  • 0.5 tablespoon ½ salt
  • 0.5 tablespoon ½ pepper

Also:

  • 1 onion (s)
  • Jalapeños
  • 8 slices bacon
  • 4 leaves lettuce
  • 40 g ketchup
  • 40 g mustard
  • 40 g BBQ sauce
  • fried onions
  • 4 slices tomato (s)
  • Edam cheese
  • Gherkins)

Instructions

  1. Mix the milk, honey and yeast in a cup, mix with 1 tablespoon flour and cover and let rise briefly.
  2. Then knead with the remaining flour, 20 g melted butter and an egg with the food processor for about 5 minutes until you get a nice, smooth dough. Let this dough rise again in a warm place for 15-20 minutes.
  3. Now knead the dough into a roll and cut into 4 equal parts. Roll out these balls of dough into 4 flat cakes approx. 0.5 cm thick, brush with egg white and sprinkle the sesame seeds on top. Bake the flatbreads in the oven at 180 ° C for 10 minutes on top / bottom heat.
  4. Season the minced meat with half a tablespoon each of salt and pepper and knead for a good 2 minutes until the mince noticeably changes its consistency and begins to stick. Shape approx. 100 g of mince into a flat cake and make a slight hollow in it. Ideally, grill the minced meat on a kettle grill over charcoal directly (i.e. over the charcoal) and with the lid closed. Grill the first side for 2.5 minutes, place 2 slices of bacon on the grill for each burger and grill the second side for 1 minute with the lid closed.
  5. Cut the rolls and coat the underside with a mixture of ketchup, mustard and BBQ sauce and top with a leaf of lettuce. Then add the meat and again some sauce (the sauce should definitely have direct contact with the meat) and sprinkle with cheese. Cover the burger with jalapeños, 1-2 slices of tomato, sliced pickles, onion sliced into rings and bacon and enjoy.

  7. A kettle grill is ideal for preparing a burger, as it gives the meat a very smoky taste and goes well with the sauce. If you want to intensify this effect, you can even sprinkle beech wood chips on the hot coal. The grill is really worth it. If you can`t find an opportunity to grill, it is advisable to roast the meat in a hot iron pan.
