Mashed Potato Snack Cake

An original snack cake made of mashed potatoes, with canned fish, olives and boiled eggs, will decorate the festive table and surprise guests with its originality and taste. Making potato cake is very simple, and the composition of the ingredients is quite budgetary.

Ingredients

  • Potatoes – 500 g
  • Canned tuna (or other fish) – 2 cans (180 g each)
  • Boiled eggs – 3 pcs.
  • Pitted olives – 80 g
  • Butter – 50 g
  • Fresh parsley (chopped) – 4 tbsp
  • Mayonnaise – 3 tbsp
  • Lemon for garnish (optional)
  • Salt
  • Pepper
  • Vegetable oil

Directions

  1. We start the preparation of the snack cake by making mashed potatoes. Cook the potatoes, add salt, and knead. Add butter to the puree. Leave the mashed potatoes to cool. Then add pepper (1 teaspoon or to taste) and chopped parsley.
  2. Cut the boiled eggs into slices.
  3. Free the canned tuna from the liquid, add mayonnaise to it and mix thoroughly.
  4. We line a bowl or salad bowl with a volume of 1 liter with cling film, grease it with vegetable oil. We spread slightly warm mashed potatoes (not all, we leave a small part), while forming walls, up to the edge of the container.
  5. Layer on the bottom: half of the tuna, eggs, olives, the other half of the tuna. The last layer is the remaining mashed potatoes. We cover with cling film and send the potato snack cake to the refrigerator for 2 hours.
  6. After that, remove the top film, cover with a flat plate and gently turn the potato cake over. We remove the cling film.
  7. Mashed potato snack cake with fish, eggs and olives, ready. Decorate it with lemon and herbs.
