Ingredients

  • 750 g sweet potato (s), peeled
  • 1 onion (s), finely chopped
  • 1 clove garlic, pressed
  • 100 g cheddar cheese
  • 200 ml cream, heated
  • 1 tablespoon butter or olive oil
  • 50 g parmesan or cheddar cheese, rated
  • salt and pepper

Instructions

  1. Cook the sweet potatoes with salt in enough water until soft.
  2. Meanwhile, fry the onion in butter or olive oil over medium heat until it is soft and light brown. Only add the garlic at the end.
  3. Drain the potatoes and let them evaporate a little. Add onion mixture and cheddar cheese and mash with a potato masher. Add enough hot cream to make a puree that is not too firm. Season to taste with salt and pepper.
  4. Inject or spread the mass into a suitable baking dish. Sprinkle with the parmesan (or cheddar) (up to this step you can prepare the puree well and put the casserole in the fridge).
  5. Encrust for a few minutes under the hot oven grill (220 degrees) - when warming up, choose a lower temperature (200 degrees) and allow for a longer time.
