Ingredients

  • 1 kg meat loaf
  • 300 g peas, frozen
  • 400 g bell pepper (s), strips, from the jar
  • 600 g pickled cucumber (s)
  • 3 onion (s)

For the marinade:

  • 4 tablespoon vinegar
  • 1 tablespoon mustard
  • 125 ml oil
  • Pepper, freshly ground
  • salt
  • parsley

Instructions

  1. Cook the peas in salted water for about 5 minutes and drain on a sieve with the pepper strips. Dice the meat loaf and slice the cucumber.
  2. Mix the marinade with the vinegar, oil, mustard and the spices. Mix with peas, bell pepper, meat loaf and cucumber and let steep for at least 30 minutes.
  3. Just before serving, cut the onions into fine rings and mix in. Decorate with the parsley.
