Meat Okroshka Ingredients

  • Boiled beef – 250 g
  • or boiled sausage – 250 g
  • Cucumber – 3 pcs.
  • Chopped green onions – 3 tbsp
  • Eggs – 3 pcs.
  • Sour cream – 1 glass
  • Salt – 0.5-1 teaspoon (to taste)
  • Sugar – 1-2 teaspoon (to taste)
  • Mustard – 0.5 teaspoon (to taste)
  • Kvass – 1 l
  • Parsley greens – 1 bunch (to taste)

Meat Okroshka Instructions

  1. Boil the eggs: Place 3 eggs in a saucepan and cover with cold water and salt. Bring to a boil over medium heat, then boil for 10 minutes. Transfer the eggs to cold water to cool completely.
  2. While the eggs cool, cut the boiled beef into cubes (or use cooked sausage as a substitute).
  3. Wash the cucumbers, peel them, and cut into cubes.
  4. Wash and finely chop the green onions.
  5. Peel the cooled eggs and separate the whites from the yolks. Finely chop the egg whites.
  6. In a large bowl, combine the cucumbers, green onions, chopped egg whites, and beef cubes. Mix well.
  7. In a separate bowl, grate or mash the egg yolks and mix with the sour cream, salt (to taste), sugar (to taste), and mustard until smooth.
  8. Pour the egg yolk dressing over the main mixture and stir well.
  9. Wash and finely chop the parsley greens.
  10. Pour 1 liter of kvass over the entire mixture, sprinkle with the chopped parsley, and stir well.
