Meat Okroshka

Okroshka in general will seem like a fairy tale to you when it comes to meat or sausage! Life will be a little better if you have okroshka for lunch!

Servings: 4


  • Boiled beef – 250 g
  • or boiled sausage – 250 g
  • Cucumber – 3 pcs.
  • Chopped green onions – 3 tbsp
  • Eggs – 3 pcs.
  • Sour cream – 1 glass
  • Salt – 0.5-1 teaspoon (to taste)
  • Sugar – 1-2 teaspoon (to taste)
  • Mustard – 0.5 teaspoon (to taste)
  • Kvass – 1 l
  • Parsley greens – 1 bunch (to taste)


  1. Place chicken eggs in a saucepan. Fill with water, salt. bring to a boil. Boil hard-boiled eggs over medium heat (10 minutes) and then cool them in cold water.
  2. Cut the boiled beef into cubes. In the absence of meat, you can replace it with lean cooked sausage.
  3. Wash the cucumbers, peel, cut into cubes.
  4. Wash, chop the onion.
  5. Then combine the onions with the cucumbers.
  6. Peel chicken eggs. Separate the egg whites from the yolks. Grind the proteins.
  7. Add the proteins to the cucumber and onion mixture.
  8. Then add the prepared meat (or sausage).
  9. Rub the yolks.
  10. Mash the yolks with sour cream, salt, sugar, and mustard. Mix well.
  11. Then add the dressing to the main mixture.
  12. Stir well.
  13. Wash and chop parsley greens.
  14. Pour the resulting mass with kvass. Sprinkle with finely chopped parsley. Stir.
