Meat Rolls with Cheese, Pickled Cucumbers and Mustard Ingredients

  • Pork (loin without bone or neck) – 600 g
  • Hard cheese – 60 g
  • Pickled cucumbers – 50 g (1-2 pcs.)
  • Salt – 1.5 teaspoon (to taste)
  • Ground black pepper – 1 teaspoon (to taste)
  • Lemon (juice) – 50 g (0.5 pcs.)
  • Medium hot mustard – 1 tbsp
  • Sunflower oil – 60 ml

For filling:

  • Fresh basil – 2-3 sprigs

It is best to use a boneless pork loin or neck – these pieces of pork are easiest to cut into even layers.
We take mustard not very strong.
You will also need wooden skewers to fasten the rolls

Meat Rolls with Cheese, Pickled Cucumbers and Mustard Instructions

  1. Slice the pork loin into layers no more than 1 cm thick, optionally trimming excess fat.
  2. Pound each pork slice on both sides with a meat mallet. Season both sides with salt and ground black pepper to taste.
  3. Squeeze the lemon to extract the juice.
  4. Sprinkle both sides of each pork slice with lemon juice. Refrigerate for 30 minutes to marinate.
  5. Cut the hard cheese and pickled cucumbers into cubes. Prepare roughly 1 cube of cheese and 1-2 cubes of cucumber for each pork slice.
  6. Spread a thin layer of mustard on one side of each marinated pork slice.
  7. Place 1 cube of cheese and 1-2 cubes of cucumber on one edge of the pork slice.
  8. Roll up the pork slice tightly.
  9. Secure the roll with a wooden skewer.
  10. Repeat with the remaining pork, cheese, and cucumber to form 6 rolls. Preheat the oven to 220 °C (425 °F).
  11. Heat 3 tablespoons of sunflower oil in a frying pan over medium-high heat. Place the rolls in the pan.
  12. Fry the rolls for 2-3 minutes on each side until browned.
  13. Transfer the rolls to a baking dish and grease with the remaining oil. Bake in the preheated oven at 220 °C (425 °F) for 10-15 minutes until the internal temperature reaches 63 °C (145 °F).
  14. Remove the skewers before serving. Serve hot or cold.
