Meat salad with Mushrooms (no Mayonnaise)

This salad is prepared from three meat ingredients at once – tongue, pork and ham. Suitable for both a holiday and a weekend meal.
Ingredients
- Pork or beef tongue (boiled) – 100 g
- Ham – 50 g
- Boiled pork – 80 g
- Bulb onions – 0.5 pcs.
- Champignons – 100 g
- Pickled cucumbers – 1 pc. (~ 100 g)
- Bulgarian pepper – 0.5 pcs. (~ 70 g)
- Wine vinegar – 2 teaspoon (or to taste)
- Sunflower oil – 2 tbsp
- Ground black pepper – to taste
For decoration:
- Balsamic sauce – 1 tbsp (optional)
- Fresh parsley
Directions
- Let’s prepare all the ingredients for the meat salad. Boil the pork tongue in advance. Cook for an hour and a half in salted water, then pour over with cold water and clean. Boil the pork for an hour and a half, or bake it in the oven. Instead of fresh champignons, you can use ready-made – pickled ones.
- Since I prefer fresh mushrooms, I’ll start with their preparation. Cut the champignons into thin slices.
- Fry the champignons in sunflower oil, salt.
- Cut the onion into thin half rings.
- Marinate the onions in wine vinegar.
- Dice the meat ingredients – ham, tongue and boiled meat.
- Dice the pepper and pickled cucumber.
- Put all the ingredients together. Season the salad with salt, pepper, lightly sprinkle with vinegar and season with sunflower oil.
- If you wish, you can garnish the meat salad with balsamic vinegar and parsley leaves. Enjoy your meal!
