Ingredients

  • 1 head red cabbage
  • 125 ml red wine
  • 4 tablespoon cranberries
  • 4 tablespoon currant jelly
  • 1 teaspoon cinnamon powder
  • 1 teaspoon ginger powder
  • 4 clove (s), crushed
  • 2 bay leaves
  • 1 tablespoon sugar
  • salt and pepper
  • 6 tablespoon applesauce
  • 6 tablespoon heavy cream

Instructions

  1. Clean and quarter the red cabbage. Cut out the stalk and grate or slice the cabbage or cut into thin strips.
  2. Bring the red cabbage strips to the boil with the red wine and after 15 minutes add the cranberries, currant jelly and spices. Cover and cook the cabbage on a mild heat for another 30 minutes.
  3. Then fold in the applesauce and the liquid cream and season to taste.
