Ingredients

For the dough:

  • 700 g wheat flour
  • 2 pinches sugar
  • 2 egg (s)
  • 1 cube yeast
  • 500 ml milk, lukewarm
  • 2 pinches salt

For the spice mix:

  • 0.5 ½ glass tomato (s), dried in oil, finely diced, with the oil
  • 4 clove (s) garlic, finely chopped
  • 3 large onions, finely diced
  • 2 red peppers, finely diced
  • 4 Chilli pepper (s), dried, coarsely ground in a mortar
  • 1 bunch herbs, mixed, thyme, basil, oregano, rosemary, alternatively
  • 3 tablespoon pizza seasoning
  • 2 tablespoon olive oil

For painting:

  • 2 piece (s) egg yolks
  • 2 Table spoons milk

Also:

  • some pepper, crushed
  • some sea salt, coarse

Instructions

  1. First prepare the herb-vegetable-spice mixture. Mix the sun-dried tomatoes, bell pepper pieces, chilli, finely chopped herbs, garlic, onions and oil in a bowl and set aside. Tip: you can prepare the mixture the evening before. Then take it out of the refrigerator in good time so that the ingredients are tempered!
  2. Prepare a yeast dough from the dough ingredients and let it rise for about 30 minutes. Then knead in the mixture and let the dough rise for another 20 minutes. The dough is pretty soft.
  3. Shape one large loaf or two smaller loaves. The dough is a bit sticky, possibly knead in a little more flour and oil your hands. To reinforce it, place 2 pieces of aluminum foil folded several times around the edge of the loaves of bread, otherwise the dough will spread too much!
  4. Whisk the egg yolks with milk and brush the loaves of bread with it, sprinkle with pepper and coarse sea salt.
  5. Bake in the preheated oven at 200 ° C for approx. 40 minutes (2 loaves of bread), if you are only preparing 1 large loaf of bread, bake a little longer.
