Ingredients

  • 60 g coconut flour
  • 30 g almond (s), round
  • 30 g tomato (s), dried
  • 20 g flaxseed
  • 20 g psyllium husks
  • 1 packet baking powder
  • 3 egg whites
  • 1 tablespoon herb cream cheese
  • 250 ml boiling water
  • spice (s) such as salt, paprika powder, oregano, thyme, basil, marjoram

Instructions

  1. Weigh almond flour, coconut flour, ground almonds, flax seeds, psyllium husks, and baking powder, then mix them in a bowl. Chop the dried tomatoes and add them to the bowl along with salt, paprika, and dried herbs.
  2. Separate the eggs and discard the yolks. Pour the egg whites into the dry mixture and stir to combine.
  3. Slowly add the boiling water while stirring constantly. Once the ingredients are well combined, add the herb cream cheese and stir until fully incorporated.
  4. Line a baking sheet with baking paper. Divide the dough into 150 g portions and shape each into a flat burger bun. Optionally top with sesame seeds.
  5. Bake in a preheated oven at 170 °C (338 °F) for 45 minutes.
  6. Allow to cool slightly before serving. Top with toppings of your choice. One burger bun per person is usually sufficient when served with salad, fries, or other sides, as they are rich and high in fiber.
