Ingredients

  • 1 kg potato (s), mainly waxy
  • 4 shallot (s)
  • 2 cloves garlic
  • 1 bunch basil
  • 100 g tomato (s), dried, pickled in oil
  • 50 g pine nuts
  • 100 ml olive oil
  • 1 teaspoon lemon juice
  • salt
  • Pepper, freshly ground

Instructions

  1. Peel the potato, wash and cook in salted water. Peel and finely dice shallots. Peel the garlic and cut into thin slices. Wash the basil, pat dry and pluck the leaves. Chop the tomatoes.
  2. Roast the pine nuts dry, remove them and set aside. Heat 2 tablespoons of olive oil, sauté the shallots and garlic until translucent, then add the remaining oil and heat.
  3. Drain the potatoes, pour the oil over them and mash them roughly. Mix in the pine nuts, tomatoes and basil and season with salt and pepper. Top off with lemon juice.
