Ingredients

  • 500 g pasta, e.., Farfalle, Riatoni or other pasta
  • 50 g rocket
  • 1 small Glass tomato (s), dried in oil, approx. 200 g
  • 200 g cherry tomato (s)
  • 1 package sheep`s cheese, approx. 200 - 250 g
  • 50 g parmesan, rated
  • some salt and pepper
  • 1 squirt lemon juice
  • 1 small Glass pitted olives, sliced, approx. 60 g
  • some olive oil
  • 50 g pine nuts

Instructions

  1. Cook the pasta according to the instructions on the packet, drain and let cool down a little. Still warm is OK, but the cheese shouldn`t melt.
  2. While the pasta is cooking, cut the sun-dried tomatoes into small pieces (I always add the oil to the salad), halve the cherry tomatoes, and cut the sheep`s cheese into cubes. Wash the rocket and pat dry.
  3. Mix everything in a large salad bowl. Do not add the sheep`s cheese and parmesan until the very end so that they don`t crumble too much while mixing. Season to taste with a little olive oil and lemon juice, salt and pepper.
  4. Perfect as a party salad or just half of it and consume as a main course in summer.
