Ingredients

  • 600 g beef, boiled
  • 5 gherkins
  • 2 shallot (s)
  • 1 clove garlic
  • 1 tablespoon parsley, chopped
  • 1 tablespoon capers
  • 2 anchovy fillet (s), pickled
  • 1 teaspoon mustard, medium hot
  • 1 tablespoon vinegar, mild
  • 4 tablespoons olive oil, or a mixture olive and neutral oil
  • salt and pepper
  • Meat broth, cold, approx. 2 - 4 tablespoon
  • 1 tablespoon basil
  • 2 tomato (s)

Instructions

  1. Cut the beef into thin slices (sliced thickness). Finely dice the gherkins and peeled shallots. Rinse the anchovy fillets, pat dry, chop finely. Peel and dice the garlic and mash it with a little salt.
  2. Prepare a marinade with mustard, vinegar, oil, meat stock, salt and pepper. Mix in the gherkins, shallots, garlic, anchovies and parsley. Spread over the meat, let it steep for at least an hour, better two hours.
  3. Quarter, core and finely dice tomatoes.
  4. Place the meat slices on a serving plate, sprinkle with basil strips and diced tomatoes and serve. This goes well with ciabatta or baguette.
