Ingredients

  • 500 g sweet potato (s)
  • 1 large onion (s) or bunch spring onions
  • 100 g feta cheese
  • 50 g pine nuts
  • 50 ml olive oil
  • 3 tablespoon rosemary
  • salt and pepper
  • 30 g tomato (s), dried in oil
  • 10 olives, filled with almonds or lemon mousse

Instructions

  1. Wash, peel and cut the sweet potatoes into thin slices. Peel the onion and cut into rings.
  2. Heat the oil in a pan and fry the onions in it. After about 2 minutes add the thin sweet potato slices and fry them too.
  3. The sweet potatoes need about 10 - 15 minutes until they are fried golden yellow on both sides and nice and crispy. Keep turning the slices in the pan and only fry them over medium heat. While the sweet potatoes are frying, cut the feta into cubes. Feta can also be used in oil, then the taste is more intense.
  4. Just before the sweet potatoes are ready, salt and pepper them to taste and add the pine nuts. Then turn off the stove and let the feta cheese steep with the sweet potatoes for another 2 minutes.
  5. Mix everything well again - if you like, you can now add dried tomatoes or stuffed olives to intensify the taste.
  6. A white bread like baguette or ciabatta tastes delicious with it.
  7. The sweet potatoes can also be served as an accompaniment to grilled cheese, tofu or as an alternative to common fried potatoes.
