Ingredients

  • 1 onion (s)
  • 1 tablespoon olive oil
  • 160 g rice
  • 500 ml tomato juice
  • 150 ml vegetable stock
  • 1 red pepper (s)
  • 1 bell pepper (s), yellow
  • 10 olives, greens, if you like it
  • salt and pepper

Instructions

  1. Dice the onion and sauté in olive oil until translucent. Add the rice and sauté briefly. Deglaze everything with tomato juice and stock, bring to the boil, then simmer for about 20 minutes.
  2. In the meantime, clean and dice the peppers.
  3. Add the cubes to the rice and cook for another 10 minutes. Season the dish with salt and pepper. If you like, you can add the olives.
