Ingredients

  • 500 g juice (melon or cucumber juice)
  • 2 g sodium alinate
  • 2 ½ g Calcic
  • 500 g water

Instructions

  1. Combine sodium alinate and 1/3 of the melon juice, then add the remaining 2/3 juice and mix thoroughly.
  2. Strain the mixture through a fine sieve and let rest for 10 minutes.
  3. While the mixture rests, dissolve Calcic in the water.
  4. Fill a syringe with the melon-alginate mixture and inject it drop by drop into the Calcic solution.
  5. Wait 1 minute for the caviar spheres to form, then strain through a fine sieve and rinse with water.
  6. For cucumber caviar, substitute cucumber juice for melon juice in step 1 and follow the same process.
