Ingredients

  • 0.5 ½ honeydew melon (s)

  • 1 pinch (s) ginger, freshly grated
  • pepper
  • 8 slices ham (Parma, San Daniele or Serrano)

  • 4 bread sticks

Instructions

  1. Remove seeds from the melons and cut out melon balls using a ball cutter. Scrape out the remaining melon flesh with a spoon and set aside.
  2. Melon Salad: Season the melon balls with port wine, ginger, and pepper. Return the marinated balls to a hollowed melon half and garnish with sliced Parma, San Daniele, or Serrano ham.
  3. Melon Soup: Scrape melon pulp and mix with the remaining melon balls, ginger, port wine, and pepper.
  4. Heat a little oil in a pan over medium-high heat and fry ham slices until crispy, about 2-3 minutes.
  5. Pour the melon soup into iced cups or glasses and top with the crispy fried ham.
  6. Melon Boat: Quarter a melon and cut the flesh into roughly 5 pieces. Arrange the pieces back on the skin.
  7. Wrap ham slices around the melon pieces and arrange on a serving plate with bread sticks on the side.
