Meringue Cake with Cream and Pomegranate

This cake is easy to prepare and the meringue combined with buttercream is delicious! The cake is decorated with ready-made meringues.

Ingredients

For the cake:

  • Egg whites – 4 pcs.
  • Granulated sugar – 200 g
  • Baking powder – 1 teaspoon
  • Starch – 1 tbsp
  • Ground nuts – 50 g

For filling:

  • Heavy cream – 300 g
  • Cream fixer – 1 sachet
  • Powdered sugar – 1 tablespoon.

For decoration:

  • Pomegranate – half a pomegranate
  • Small meringues (ready-made) – 1 pack

Directions

  1. To prepare the meringue, beat the cooled proteins well, gradually adding granulated sugar. Mix baking powder with starch and nuts, mix gently with proteins.
  2. Line the bottom of a 22 cm springform cake tin with baking paper. Place the meringue carefully in a mold and smooth with a spatula. Bake for 1 hour at 150 degrees. The meringue should brown slightly. Then turn off the oven and let the cake cool down.
  3. Whisk the cream well with fixer and icing sugar.
  4. Disassemble the pomegranate into grains.
  5. Gently transfer the meringue to a dish. Top with cream and garnish with small meringues and pomegranate seeds.
  6. Ready meringue cake.

    P.S. When stored for a long time, the meringue cake is soaked in cream and does not crunch.
