Ingredients

  • 3 large egg whites
  • 0.25 teaspoon ¼ tartar baking powder
  • 155 grams sugar

  • Lemon balm, for garnish

Instructions

  1. Put the egg whites in a mixing bowl and set aside for half an hour so that they come to room temperature.
  2. Line a baking sheet with parchment paper and preheat the oven to 135 degrees.
  3. Beat the egg whites with the tartar powder until stiff. Then stir in the sugar well, tablespoon by tablespoon.
  4. Now put 8 piles of the same size on the baking sheet. Shape a little round with the tablespoon and then make an indentation in the middle with the back of the spoon so that the whole looks like a nest that should have a diameter of 8-9 cm.
  5. The tray goes into the oven and the meringues are baked for about 45-50 minutes. Then you turn off the stove, don`t open the door and leave it in for an hour.
  6. Remove and allow to cool completely on a wire rack.
  7. Then you fill one tablespoon of lemon curd into the hollow, you can find a recipe for this in my recipes.
  8. A few cleaned strawberries are cut into slices. The kiwi is peeled, cut into slices, halved and quartered. Drain the mandarins and place one or two per nest on the lemon curd. Add one or two slices of strawberries, a raspberry and two kiwi pieces. Then stick a piece of lemon balm in the middle.
  9. Then place the nests on a plate or serve straight away on a dessert plate.
  10. A dollop of cream that you put on your plate is also very nice.
  11. You can of course put together the fruit of your choice.
  12. This dessert is nice for Easter, but also very nice all year round with a variety of fruit.
