  • 1 green pepper (s)

  • 1 spring onion (s)
  • 1 avocado (s)
  • 1 can black beans
  • 1 teaspoon paprika powder, smoked
  • 1 teaspoon cumin powder
  • 0.5 ½ garlic powder
  • salt and pepper

Instructions

  1. Dice the potatoes and stew for 10 minutes.
  2. Dice the peppers and avocado as well. Cut the onion into strips, slice the spring onion and set aside the green part as a garnish.
  3. Heat enough oil in a large pan and fry the onions and peppers for 5 minutes. Then add the potatoes and the spices and fry for 5 minutes, then season with salt and pepper. Finally stir in the beans and fry everything for another 5 minutes. Finally, season everything with salt again.
  4. Divide the potatoes on the skins and garnish with the avocado and the green part of the spring onion. It goes well with salsa or BBQ sauce.
