Rice cooked in this way is delicious as an independent dish, and can be served as a side dish to any meat dish or fish.
Ingredients
Vegetable oil – 3 tbsp
Onion – 1 onion
Garlic – 2 cloves
Chicken broth – 3 cups chicken or vegetable broth (this will be the lean option)
Rice – 1.5 cups rice This is where I make my own adjustments. I take 1 cup white rice and 0.5 cups wild rice. If you can get wild rice, try it – it tastes better.
Bulgarian green pepper – 2 tablespoon. finely chopped
Parsley – 2 tablespoons, chopped
Salt – 0.5 teaspoon

How to cook Mexican rice: Finely chop the onion and garlic.
Heat vegetable oil in a frying pan and fry for 4 minutes, stirring occasionally, onion, garlic, and wild rice. Wild rice takes a little longer to cook. If we put it at the same time as white rice, it can be hard. Add pepper and fry for 2 minutes. Add white rice and immediately pour in broth. For lean rice, take vegetable broth. Salt, bring to a boil, reduce heat, cover and cook Mexican rice for 20-25 minutes until rice is cooked. Add the parsley and stir.
You can make a salad of fresh vegetables for Mexican rice.
