Ingredients

  • 100 g walnuts, finely chopped
  • 90 g cotton candy, Turkish (Tel Pismaniye), vanilla flavor
  • 25 g powdered suar
  • 40 g butter
  • 80 g powdered suar
  • 1 vanilla pod (s)
  • 500 ml milk
  • 45 g cornstarch

Instructions

  1. Lightly roast the walnuts in a pan without fat. Caramelize lightly with the powdered sugar. Add the butter, add the cotton candy in small shreds and let everything brown. Transfer and let cool.
  2. Mix the cornstarch with some of the milk. Put the rest of the milk in a saucepan and add the powdered sugar. Scrape out the vanilla pod and add the vanilla pulp to the milk, I also add the scraped pod to the milk, it gives it flavor. Alternatively, you can put the pod in a glass with sugar and make homemade vanilla sugar.
  3. Bring the milk to the boil and stir in the cornstarch. Bring to the boil again so that the cornstarch can absorb. Remove the vanilla pod and allow the milk cream to cool. Stir at short intervals so that no skin forms.
  4. As soon as the milk cream has cooled down, transfer it and pour the walnut and cotton candy topping onto the milk cream. Chill for at least 2 hours before consumption.
