Ingredients

  • 300 g minced beef or half & half
  • 1 large onion (s)
  • 2 tablespoon bacon cubes
  • Oil, for frying
  • 2 leeks (two small or one large)
  • 2 large potatoes
  • 200 g processed cheese or cream
  • 2 tablespoon sour cream
  • 600 ml vegetable stock
  • salt and pepper
  • nutmeg

Instructions

  1. Peel the onion and cut into cubes. Cook in oil in a large saucepan with the bacon. Add the minced meat and let it take color. Stir every now and then so that it spreads out nicely and fries evenly.
  2. In the meantime, clean, wash, halve and cut the leek into fine strips. If you find sand while cutting, wash again. Add the leek to the seared minced meat, sear a little and deglaze with vegetable stock. Wash and peel the potatoes, cut into small cubes and add. Let the soup simmer for about 20 minutes.
  3. Finally, add the processed cheese, or alternatively the cream, and the sour cream and bring to the boil again briefly. Season to taste with salt, pepper and nutmeg.
  4. To serve, place the soup in a deep plate or a soup bowl and serve hot!
