Minced Meat Kebabs with Green Onions, on Skewers (in the Oven)

by Editorial Staff

Minced pork kebabs are, in fact, ordinary cutlets baked in the oven. But serving such meat cutlets in the form of kebabs on a skewer in combination with green onions makes the dish festive. Green onions give the kebabs an amazing flavour and are also very tasty.

Minced Meat Kebabs with Green Onions, on Skewers (in the Oven) Instructions

  1. Peel and finely chop the onion. Rinse and pat dry the green onions and dill.
  2. In a large bowl, combine the minced pork, chopped onion, egg, 3 tablespoons of bread crumbs, black pepper, and salt. Mix until combined.
  3. Finely chop the fresh dill and stir into the meat mixture.
  4. If the mixture is too wet to form balls, stir in additional bread crumbs until it reaches the right consistency.
  5. Moisten your hands with water to prevent sticking, then shape the meat mixture into walnut-sized balls.
  6. Roll each ball in the remaining bread crumbs to coat evenly on all sides.
  7. Cut the white stems from the green onions (4–5 cm lengths), keeping the green parts.
  8. Preheat the oven to 200°C / 392°F.
  9. Thread meatballs onto skewers, alternating with white green onion pieces and rolled green onion leaves (4 meatballs per skewer).
  10. Line a baking sheet with parchment paper and place the skewers on it.
  11. Bake for 30 minutes at 200°C / 392°F until the pork reaches 63°C / 145°F internally, covering with foil if the onions are browning too quickly.
