Ingredients

For the dough:

  • 150 ml water, lukewarm
  • 1 packet dry yeast or /2 cube fresh yeast
  • 1 pinch (s) sugar
  • 1 pinch (s) salt
  • 450 g flour
  • 2 tablespoon yogurt, 3.5%
  • 2 tablespoons oil

For the filling:

  • 250 g minced meat
  • 1 onion (s)
  • 1 clove garlic
  • some oil
  • 1 tomato (s)
  • Olives, green, pitted
  • 100 g feta cheese
  • nutmeg
  • salt and pepper
  • Black cumin
  • 4 egg (s)
  • 1 tablespoon milk, .5%

Instructions

  1. For the dough:
  2. In a bowl, dissolve the yeast and sugar in the lukewarm water. In another bowl, add the flour, salt, yogurt and oil. Add the yeast mixture and knead it into a smooth and homogeneous dough. Cover and let rise in a warm place for at least 45 minutes.
  3. For the filling:
  4. Fry the onions and garlic and then add the minced meat and fry as well. Cut the tomato into cubes, slice the olives and add to the minced meat. Season everything with salt, pepper and nutmeg. Mix 2 eggs into the mixture. Cut the feta cheese into cubes.
  5. Divide the dough into 4 - 6 equal portions and roll out into oblong oval flatbreads. Put the minced meat mixture in the middle, fold the edges inwards and twist the ends.
  6. Whisk an egg and brush onto the visible mass. Finally whisk 1 egg yolk with the milk, brush the edges with it and sprinkle with black cumin.
  7. Bake in a preheated oven at 200 ° C (top / bottom heat) for at least 20 minutes.
  8. The topping can be varied as you like, e.g. with spinach, feta cheese, etc.
