Ingredients

  • salad your choice (e.g. lamb`s lettuce)
  • 2 large onions
  • 1 green pepper (s)
  • 6 small cherry tomato (s)
  • 3 carrot (s)
  • 1 tablespoon olive oil
  • 1 handful pine nuts or a mixture seeds
  • 1 teaspoon mustard, medium hot
  • 6 cl balsamic vinegar, red or white
  • 1 teaspoon honey
  • 0.5 teaspoon ½ sambal oelek
  • 0.5 teaspoon ½ sugar, brown
  • salt and pepper
  • Mixed herbs (e.g. 8 herbs mix)

Instructions

  1. Fry the onions in some of the olive oil, when the onions are translucent, add the chopped peppers. Both are roasted in the pan with a little salt, pepper and brown sugar.
  2. In the meantime, wash the lettuce, then cut the carrots into slices and the cherry tomatoes into quarters. The onion / pepper mixture can cool down a bit in the meantime so that the lettuce does not disintegrate when mixed together. Now the pine nuts can be roasted in a small pan on medium heat.
  3. Mix the rest of the olive oil with the mustard, the sambal oelek, the vinegar, the honey and the herbs - season the dressing well with salt and pepper. When the kernels are golden brown in color and smell pleasant, they can be added to the salad with the onions and peppers - put the dressing on top and mix well.
