Ingredients

  • 2 onion (s), diced
  • 250 g bacon, diced
  • 3 cloves garlic, finely chopped
  • 1 can sauerkraut, (about kg)
  • 2 tablespoon tomato ketchup
  • 1 tablespoon tomato paste
  • 500 ml broth
  • 1 bay leaf
  • Paprika powder, noble sweet
  • Caraway seed
  • salt and pepper
  • Sour cream
  • Parsley, chopped

Instructions

  1. Leave out the bacon cubes in a saucepan, then add the onion cubes and garlic and sauté briefly. Add the sauerkraut and top up with the stock. Add the bay leaf and cover and let everything simmer for about two hours, stirring again and again.
  2. Season to taste with the remaining ingredients, remove the bay leaf and serve with toasted bread.
  3. As a starter, the soup is enough for more people.
  4. Variants: You can also add meat cubes or 2 to 3 grated carrots just before the end of the cooking time.
  5. If you are in a hurry, you don`t have to let the soup boil for so long, it tastes good even after a shorter cooking time. But my mother swears by the long cooking time because it makes the soup milder.
