Moroccan Carrot Salad

The carrot and olive salad has a very original taste thanks to the citrus and honey dressing.

Servings: 2

Ingredients

  • Carrots – 300 g
  • Olives – 10-12 pcs.
  • Parsley – 3 sprigs
  • Mint – 3 sprigs
  • Olive oil – 2 tbsp
  • Salt to taste

For refueling:

  • Orange – 1/4 pc.
  • Lemon – 1/4 pc.
  • Honey – 1 teaspoon
  • Ground coriander – 1/4 teaspoon
  • Ground black pepper – to taste

Directions

  1. Prepare foods for Moroccan carrot salad.
  2. Mix ingredients for dressing.
  3. Grate carrots or in a food processor.
  4. In a skillet, fry the carrots in olive oil.
  5. Wash the mint and parsley and chop finely. Cut the olives in half.
  6. Mix carrots with olives and herbs.
  7. Season the salad with the dressing.
  8. Divide the carrot salad in portions.
