  • 200 g chocolate, dark chocolate
  • 100 g cream, at least 30% fat
  • Pinch salt

Instructions

  1. Put the sugar in the mixing bowl and pulverize it into powdered sugar for 10 seconds on level 10.
  2. Transfer the sugar to another bowl.
  3. Now break the chocolate into pieces and place in the mixing bowl. Mix for 15 seconds on level 8. Now add icing sugar and cream to the mixing bowl and melt the mixture for 4 minutes at 50 degrees on level 2.
  4. Separate the eggs and add the 4 egg yolks to the mixing bowl. Now the mixture is mixed for 15 seconds on level 4, then put in a bowl and set aside.
  5. Now wash and dry the mixing bowl thoroughly.
  6. Now the egg white is beaten with a pinch of salt and with the help of the mixer for 5 minutes on level 3 until stiff. The beaten egg mass is now carefully added to the chocolate mass and stirred in.
  7. Before serving, the chocolate mousse should be refrigerated for at least 3 hours.
  8. Red fruits go well with this mousse.
