Ingredients

  • 200 g mozzarella
  • 200 g mano (s)
  • 1 bunch wild garlic
  • 6 tablespoon olive oil, mild, good quality
  • 6 tablespoon balsamic vinegar (blueberry balm with 3% acid)
  • Fleur de sel

Instructions

  1. Cut the mozzarella into slices and cut them in half. Use a peeler to cut the peeled mango into strips. Wrap the wild garlic in the mango strips, but so that it still peeks out. Spread these rolls on the mozzarella slices. Beat the blueberry balm with olive oil in a cup. Drizzle the dressing over the mango mozzarella and serve sprinkled with fleur de sel.
  2. Alternatively, you can cut the mango into cubes. Mix these cubes with the chopped wild garlic, the blueberry balm and the olive oil as well as the salt and add these marinated mango cubes to the mozzarella.
  3. Instead of fresh wild garlic you can also use wild garlic pesto, but then you can do without the salt. Or you can use basil and spring onions instead of wild garlic. In any case, take both together so that the taste is balanced.
