Muffins with Plums and Oatmeal Ingredients

  • For the first layer:
  • Plums (finely chopped) – 4 pcs.
  • Milk – 125 g
  • Natural yogurt without additives – 125 g
  • Butter (melted) – 60 g
  • Large egg – 1 pc.
  • Flour – 300 g
  • Sugar – 150 g
  • Baking powder – 2 teaspoon.
  • Salt – 0.125 teaspoon.
  • Vanilla extract – 0.5 teaspoon
  • For the second layer:
  • Oatmeal flakes – 30 g
  • Flour – 30 g
  • Coconut flakes – 30 g
  • Brown sugar – 50 g
  • Ground cinnamon – 0.5 teaspoon.
  • Liquid honey – 1 tbsp
  • Butter – 60 g

Muffins with Plums and Oatmeal Instructions

  1. Turn on the oven to preheat to 180 degrees. Line 12 muffin trays with paper baskets.
  2. In a large bowl, combine flour, sugar, baking powder and salt.
  3. In another bowl, whisk milk, yogurt, melted butter, eggs and vanilla extract. Mix this mass with the flour mixture. Add chopped plums, stir. Put the dough into prepared molds, filling them 3/4 full.
  4. Prepare the top layer. In a bowl, combine oatmeal, flour, coconut, brown sugar, cinnamon and honey. Add butter to this mass, mix well with dry ingredients, until crumbly. Sprinkle this mass over the dough in the tins. Place in a preheated oven, bake muffins with plums for 25-30 minutes, until a clean wooden stick.
