Mushroom Pancake Snack Cake

A simple, tasty and very satisfying snack cake made from mushroom pancakes with cheese and green onions.
Ingredients
For pancakes:
- Whole grain wheat flour – 130 g
- Corn starch – 1 tbsp
- Milk – 200 ml
- Eggs – 2 pcs.
- Salted or pickled mushrooms – 300 g
- Bulb onions – 1 pc.
- Vegetable oil – 2 tbsp
- Salt to taste
For filling:
- Cheese (I have mozzarella) – 150 g
- Green onions – 1 bunch
Directions
- Pass the mushrooms and onions through a meat grinder and fry in vegetable oil for 10-15 minutes. Knead the dough from flour, starch, milk and eggs. Add the fried mushrooms and onions to the dough, salt and mix. Bake the pancakes in a preheated pan on both sides until tender (I got 14 pancakes with a diameter of 16 cm).
- For the filling, grate the cheese on a coarse grater. Chop the green onion finely.
- Turn on the oven to heat up to 200 ° C. Place the pancakes in a baking dish, sprinkle with cheese and green onions.
- Bake the pancake cake with cheese and green onions for 10-15 minutes in the oven preheated to 200 ° C.
- Transfer the finished cake to a dish, cut into portions and serve.
