Mushroom Snack Cake with Cream Cheese

Cream cheese mushroom snack cake is a great idea for a hostess who wants to surprise her guests. A snack cake prepared according to this recipe will delight you with a rich creamy mushroom taste and aroma. Try to cook.

Ingredients

For the dough:

  • Canned mushrooms (boletus) – 250 g
  • Carrots – 1 pc.
  • Bulb onions – 1 pc.
  • Eggs – 3 pcs.
  • Wheat flour – 80 g
  • Baking powder – 1.5 teaspoon
  • Vegetable oil – 100 ml
  • Salt to taste

For the cream:

  • Processed cheese – 250 g
  • Cream 15-20% – 200 ml
  • For decoration (optional):
  • Fresh greens
  • Cherry tomatoes
  • Cranberry

Directions

  1. Preparing products for a mushroom snack cake. Put the processed cheese in the refrigerator.
  2. Peel onions and carrots.
  3. Finely chop the onion. Three carrots on a fine grater.
  4. Grind the mushrooms in a blender.
  5. In a frying pan in vegetable oil (3 tablespoons), fry the onions and carrots for 5 minutes, stirring occasionally.
  6. Add chopped mushrooms, salt a little, mix. Fry mushrooms, carrots and onions for 5-6 minutes.
  7. Break the eggs into a deep saucepan, add a pinch of salt.
  8. Place the pan with eggs in a water bath. Beat the eggs with a mixer until the volume increases by 3-4 times.
  9. Gradually, continuing to beat, pour the remaining vegetable oil into the pan. We remove the pan from the water bath, let it cool.
    We turn on the oven to heat up to 160 degrees.
  10. Sift flour and baking powder.
  11. Gently, using a spatula, mix the flour into the egg mass in small portions.
  12. Then add the fried mushrooms with vegetables to the dough, mix gently.
  13. Cover the bottom of the form with parchment paper.
  14. We transfer the dough into a mold and send it to a preheated oven. We bake for 30-40 minutes at 160 degrees. We check the readiness with a toothpick.
  15. Let the finished cake cool slightly in the form. Then take the cake out of the mold and cool completely.
  16. Carefully cut the cake lengthwise into two parts with a sharp long knife.
  17. We prepare the cream. Rub the processed cheese on a fine grater.
  18. Pour cream into the curds, mix.
  19. We put the pan on heating and, stirring constantly, bring the contents until smooth.
  20. We begin to collect the snack cake.
    Grease the first crust liberally with hot cheese filling.
  21. Cover with the second cake. Lubricate the top and sides of the snack cake with the remaining filling.
  22. Mushroom snack cake with cream cheese is ready. If desired, decorate the mushroom cake with herbs, cherry tomatoes and cranberries.
