Ingredients

  • 500 g mushrooms, fresh small ones

For the dough:

  • 150 grams flour
  • 0.25 teaspoon ¼ salt
  • 1 tablespoon oil
  • 2 egg (s)
  • 170 ml white wine

Also:

  • Oil for deep-frying
  • remoulade

Instructions

  1. Clean the mushrooms and set aside.
  2. Separate the eggs for the batter. Mix the flour with salt, oil, egg yolks and white wine to a thick dough. Let the dough rest for about half an hour. Then beat the egg white until stiff and fold in carefully.
  3. Pull the mushrooms one by one through the batter so that they are completely covered. Then deep-fry in oil at around 170 ° C until golden.
  4. Serve with tartar sauce.
