Ingredients

  • 2 onions)
  • 4 tablespoon flour
  • 3 tablespoon mustard, spicy (Düsseldorfer Löwensenf)
  • 4 steak (s), entrecôte, beef steak from the rib
  • 4 tablespoon oil (sunflower oil)
  • 100 ml sweet cream
  • 100 ml meat broth
  • Salt and pepper, freshly ground

Instructions

  1. Peel the onions and dice them very finely. Prepare the flour on a plate.
  2. Mix two tablespoons of mustard with the diced onion. Carefully pound the steaks flat, pepper and salt and brush on one side with the onion and mustard mixture. Place the mustard-coated side in flour as well.
  3. Heat the oil in a pan and sear the steaks with the flour and mustard side, then turn and fry for about 4 to 6 minutes, remove the meat, pour off the fat and stir a tablespoon of mustard into the roasting set.
  4. Extinguish with the cream and stock, reduce a little and then return the steaks to the pan. Season to taste with salt and pepper
