Ingredients

  • 50 g walnuts
  • 50 g pine nuts
  • 2 cloves garlic)
  • 100 g parmesan cheese
  • 100 ml olive oil
  • 1 tablespoon mustard, grainy, spicy, not sweet!
  • pepper
  • Cayenne pepper
  • sea-salt

Instructions

  1. Peel the walnuts and put the kernels with the pine nuts in the food processor. Peel the garlic, chop the cheese a little and add to the nut mixture with the mustard, then puree everything. Gradually add the oil until you have a smooth sauce. Season to taste with pepper, cayenne pepper and salt.
  2. Tip: I usually use two types of mustard, a bit coarse, spicy one and a little mustard with green pepper (then the pepper can be left out).
  3. This goes well with spaghetti or penne. Mix the pesto with the pasta and garnish with fresh parsley. But the pesto is also suitable as a crust for a nice piece of meat.
